Stir Fried Bitter Gourd Omelet

Need a quick and healthy breakfast? Then, try this stir fried ampalaya omelet.

Did you know that ampalaya is rich in Vitamin C and high in Vitamin A? Can help reduce blood sugar and could have cancer fighting properties.

Ampalaya and egg are always a good combination. What’s great with this dish is that you can enjoy it as it is or pair it with rice or sweet potatoes. Also a reminder In choosing eggs, it’s better if it is organic or cage-free.

  • 1-2 tbsps cooking oils (medium – high tolerant)
  • 2-3 eggs
  • 1-2 tsps non-dairy milk
  • 1-2 garlic minced
  • 1 medium ampalya, halved and thinly sliced (remove seeds)
  • 1-2 tbsps chopped scallions
  • salt to taste
  • ground black pepper
Cooking Instructions:
  1. In a bowl, combine eggs, milk, salt and pepper
  2. Heat the oil on low-medium heat, add the garlic, and sauté until it lightly . Make sure not to toast the garlic.
  3. Add ampalaya, saute until it changes color and becomes softer
  4. Flatten/distribute the ampalaya and garlic evenly on the pan.
  5. Pour the egg mixture and lift the pan to distribute the egg around the pan. Make sure that the egg mixture covers the ampalaya slices.
  6. Spread half of the scallions over the omelet
  7. Tilt the pan from time to time on different sides to direct the uncooked egg mixture on the edge.
  8. Get a spoon or fork to lift the omelet slightly. The omelet should not be too firm and the base is not burnt.
  9. Remove the pan from the heat and cover the pan.
  10. Add the remaining scallions before serving,
